Mashed potatoes used to be a great side dish for me. But, it was not Paleo since potatoes are high in carbs, relatively low in nutrients, and contain high levels of glycoalkaloids. Then I discovered mashed cauliflower, which could be made with the consistency and satisfaction of mashed potatoes without the bad stuff. Cauliflower is a cruciferous vegetable that has numerous health benefits.
PALEO CAULIFLOWER MASH
Ingredients:
2 10-oz bags of cauliflower florets
2-3 tbs ghee or butter from grass-fed cows
Salt, pepper, garlic powder to taste
1 tsp organic kelp granules
Preparation:
• Cut florets into small pieces
• Place cauliflower into steamer pot to steam
• Turn burner on and steam cauliflower for 12-14 minutes (do not over cook)
• Place steamed cauliflower into Vitamix or food processor and blend until smooth
• Add fat, salt, pepper, garlic powder, and kelp granules – adjust amounts for personal taste
• Eat as is or enjoy with toppings
