My Favorite Paleo Recipes:
Guacamole

GuacamoleI love avocados. They have an abundance of healthy fat, fiber, and micronutrients. My favorite ways to eat them are raw with some kelp granules sprinkled on top, cut up in any salad, always in my smoothies to make them creamy, or in this recipe below.

 

Ingredients:
2 medium ripe avocados
1/2 finely chopped red onion
1/2 jalapeño pepper, minced (according to your desire for heat)
1 handful of cilantro leaves, chopped
1/4 Tsp sea salt
Juice of 1/2 lime

 

Preparation:

  1. Remove avocado meat and place in large mixing bowl (Here is a great avocado slicer in 13 Essential Gadgets in My Paleo Kitchen.)
  2. Add other ingredients and mix well
  3. Eat plain; or spread on slices of cucumber; or use as a dip for celery, cucumber slices, or carrot sticks
