Ingredients:
CRUST
2 Cups cauliflower, chopped to rice size in food processor
1 1/2 Cups grass fed raw milk mozzarella cheese, shredded
1 Tsp oregano
1 Tsp crushed garlic
1/4 Tsp garlic powder
1/4 Tsp sea salt
1 egg
Olive oil
TOPPING
Anchovies (as many as you want), chopped
1 Cup (more or less) raw baby spinach, chopped
1/4 Cup (more or less) Mozzarella cheese, shredded
Preparation:
- Preheat oven to 450°F
- Microwave chopped cauliflower for 5 minutes (this will reduce to about 1 cup)
- Combine all ingredients for crust in mixing bowl and stir
- Place parchment paper on baking sheet, and place crust mixture on parchment paper
- Form mixture into pizza shape
- Drizzle olive oil over pizza dough
- Cook dough in oven for 15 minutes
- Remove from oven, and place anchovies, spinach, and mozzarella cheese on crust
- Broil for 3-4 minutes until cheese is melted
