I have tried many banana bread recipes, but this one is the best. Most Paleo-type recipes usually have been very dry for my taste. This is moist and reminiscent of the banana breads I enjoyed before going Primal. And, how can you go wrong when it includes dark chocolate crumbles? Go easy. This is a treat; not a regular part of a diet.
Paleo Banana, Nut, Chocolate-Chip Bread
Ingredients:
4 bananas
4 eggs
1/2 Cup crunchy almond butter, unsalted
4 Tbs ghee or butter (you could substitute coconut oil)
1/2 Cup coconut flour
1 Tbs cinnamon (I use Ceylon cinnamon)
1 Tsp baking soda
1 Tsp baking powder
1 Tsp vanilla
1/8 Tsp sea salt
1/4 Cup dark chocolate bar (my favorite is 85% Dark Blackout by Alter Eco), chopped
Preparation:
- Preheat oven to 350°F
- Combine bananas, eggs, almond butter, and ghee (or butter or coconut oil) and mix thoroughly; then blend with a stick blender
- Add coconut flour, cinnamon, baking soda, baking powder, vanilla, sea salt, and chopped chocolate; mix well
- Grease a 9×5 glass or metal loaf pan with coconut oil
- Pour in batter, and place in oven
- Bake about 55 minutes in glass or 40 minutes in metal (until a toothpick inserted into the center comes out clean)
- Remove from oven and remove (I usually flip it out as soon as I can)
- Slice and serve (For my wife and me, we slice it and then freeze it for later)
